Pork Medallions and Apples with Couscous and Broccoli with Olive OilAlso Include: 1 fresh kiwi
Pork Medallions and Apples*
Ingredients
Directions: Preheat oven to 450 degrees F. Rinse the pork, trim of all visible fat and slice thinly. Wash and slice the apple. Place pork in a baking dish in a single layer. Top with rosemary, mustard and apple slices. Pour wine and water around the pork. Bake for 10 minute, basting with the pan juices. Reduce heat to 350 degrees F and continue baking for 5-10 minutes until pork is done and no longer pink inside.
Couscous*
Ingredients
Directions: Bring water to a boil over high heat; remove from heat, add couscous, stir and cover. Let stand for 5 minutes. Fluff with fork.
Broccoli with Olive Oil*
Ingredients
Directions: Rinse broccoli and cut into bite size pieces. In a steamer, steam broccoli until done, add oil and toss well. You could also heat oil in a non-stick skillet on medium-high heat and sauté broccoli until cooked, but still firm. Old Fashioned Cheeseburger with salad

Old Fashioned Cheeseburger*
Ingredients
Directions: Preheat broiler. Form ground beef into patty. Broil hamburger, about 5 minutes on each side for medium. Once the patty is cooked place cheese on top of the patty until melted. Pace patty on bun with tomato, lettuce and condiments to make burger. Serve. |
Meatloaf and Green Beans with Almonds and fruit
Meatloaf*
Ingredients
Directions: Mix ground beef with all ingredients. Form meat mixture into a small loaf and place in a microwave safe dish. Cover with waxed paper. Microwave on medium for 10 to 12 minutes or until done. You can also pre-cook loaf in the microwave for about 5-6 minutes and finish in a preheated 450 degree F oven for about 8 to 10 minutes to brown. Note: Additional spices may be added according with taste preferences.
Green Beans with Almonds*
Ingredients
Directions: Rinse, trim and cut beans into 2 inch pieces. Microwave or steam green beans for 8 to 10 minutes until crisp tender. Drain thoroughly and stir in almonds. Serve. Hawaiian Chicken Stir-fry with Basmati Rice
Hawaiian Chicken Stir-fry*
Ingredients
Directions: Rinse and cut up fresh broccoli. Rinse chicken and cut into strips. Heat non-stick wok or large skillet with oil over med-high heat. Add chicken strips and cook until lightly browned. Add broccoli and 1/4 cup of water, cooking until broccoli is crisp tender, about 5-6 minutes. While chicken and broccoli are cooking, combine 1/4 cup of water, rice vinegar, soy sauce, cornstarch, and onion powder in a small bowl. Add the soy sauce mixture to chicken and cook 2-3 minutes more until mixture thickens. Reduce heat, and then stir in pineapple. Cover and cook about one minute until all ingredients are heated through. Serve.
Basmati Rice*
Ingredients
Directions: Place rice in a small pot with tight-fitting lid and cover with about 2 times the amount of water (for example if you're cooking 4 tablespoons of rice, use 8 tablespoons of water...about 1/2 cup water). Bring to a boil, uncovered, on high heat; reduce heat to low, cover tightly and cook for about 15-20 minutes, or until water has been absorbed. |
