Spinach Egg Salad*
Ingredients
Directions: Rinse and dry spinach. Poach egg whites until cooked; chop and set aside. Place spinach with vegetables in salad bowl and toss with dressing; top with chopped egg whites. Serve. Note: Two egg whites is about 1/4 cup. You may use whole large eggs and hard boil, then discard egg yolks. |
