Pork Medallions and Apples with Couscous and Broccoli with Olive Oil

Also Include: 1 fresh kiwi
- 6 oz. lean pork
- 1 small apple
- 1 tsp. dried rosemary
- 1 tsp. Dijon mustard
- 2 tbsp. white wine
- 1/4 cup water
Directions:
Preheat oven to 450 degrees F. Rinse the pork, trim of all visible fat and slice thinly. Wash and slice the apple. Place pork in a baking dish in a single layer. Top with rosemary, mustard and apple slices. Pour wine and water around the pork. Bake for 10 minute, basting with the pan juices. Reduce heat to 350 degrees F and continue baking for 5-10 minutes until pork is done and no longer pink inside.
- 3 tbsp. dry couscous
- 1/2 cup water
Directions:
Bring water to a boil over high heat; remove from heat, add couscous, stir and cover. Let stand for 5 minutes. Fluff with fork.
Ingredients
- 1 cup fresh broccoli
- 2/3 tbsp. olive oil
Directions:
Rinse broccoli and cut into bite size pieces. In a steamer, steam broccoli until done, add oil and toss well. You could also heat oil in a non-stick skillet on medium-high heat and sauté broccoli until cooked, but still firm.
