Meatloaf and Green Beans with Almonds and fruit

Meatloaf*
Ingredients
  • 6 oz. of lean, ground round beef
  • 1 tbsp. low sodium breadcrumbs
  • 1 tbsp. ketchup
  • 1/3 cup chopped onion
  • 1/2 tsp. Worcestershire sauce
  • 1/4 tsp. black pepper
  • 1 tbsp. liquid egg whites

Directions:

Mix ground beef with all ingredients. Form meat mixture into a small loaf and place in a microwave safe dish. Cover with waxed paper. Microwave on medium for 10 to 12 minutes or until done. You can also pre-cook loaf in the microwave for about 5-6 minutes and finish in a preheated 450 degree F oven for about 8 to 10 minutes to brown. Note: Additional spices may be added according with taste preferences.

 
 
Green Beans with Almonds*

Ingredients

  • 1 1/2 cups fresh green beans
  • 3 tbsp. sliced almonds

Directions:

Rinse, trim and cut beans into 2 inch pieces. Microwave or steam green beans for 8 to 10 minutes until crisp tender. Drain thoroughly and stir in almonds. Serve.
