Beef and Cheese Tacos*

Ingredients

  • 5 oz. of lean, ground round beef
  • 1 1/2 oz. low fat or nonfat shredded cheese
  • 1/2 cup lettuce, romaine or lettuce of choice
  • 1/2 medium fresh tomato
  • 2 taco shells
  • 1/3 cup low sodium salsa
  • 1/3 cup avocado, chopped

Directions:

Heat a non stick skillet to medium, crumble and brown ground beef; drain any fat and stir in salsa. Cook for about 1 minute more to combine thoroughly. Rinse, dry and shred lettuce; chop tomato; set aside. Stuff cooked beef, cheese, tomato and lettuce into a prepared taco shell(s). Top with avocado and serve.
